I am a creature of the night. This I know to be true. Late nights prove to be a very interesting and useful time for me, and I never quite know what I'll get up to. While mere mortals are getting "sleepy" (puh-leaze!), I'm just getting started!
I partake in many late-night activities (all within the safety of my place, fear not) including, but not limited to:
-solo dance parties
-baking
-washing dishes
-much-needed cleaning - I just can't bring myself to do it during the day.
-painting
I'm really not sure what makes me stay up so late, I just can't help it. As the night wears on, I become more alert and not-sleepy...until about 3:30am. I know, it's shocking.
Well, to get to the point of this blog...
For the past 3 days, I have had a dream. A dream of muffins, but not just any muffins - blueberry muffins! I knew I could count on Martha, so I searched her site and found the perfect recipe: Healthy Banana-Blueberry Muffins.
This recipe solved a few of my problems. For starters, I was craving blueberry muffins - check! Secondly, I had bananas at a stage that were too ripe for me to ingest in fruit-form - check!
So, I baked 'em up in the wee hours of the morning, and I am quite impressed with the recipe. It tastes as the title suggests, the muffins taste "healthy" - but not in a food-that-is-healthy-but-actually-tastes-dry-and-cardboardy way. These muffins are light, delicious, fruity, and taste like you aren't eating 500 calories per serving. It's a very easy recipe to follow, and I so beat her "20 minute" prep time - HA!
